2 peak milk tins of flour 

2 eggs 

100g sugar

1 1/2 cups of liquid milk (powdered milk can be used, it should be diluted) 

1 tbsp baking powder 

1 tsp vanilla flavour 

4 tbsp oil 

1/4 tsp salt 


Seive the flour in a mixing bowl. Add the baking powder, salt, sugar and stir with a spatula. Add oil, vanilla flavour, eggs and milk. Stir very well till there are no lumps and it is of dropping consistency. 


Goodness Pays

The sun shone on the river. It became transparent that anyone that stands by the river will see his face. It's as clear as a mirror. A boy of 10 years was driving a canoe with a paddle on his hand. He clear the water with it as he passes by. When he reached the middle of the river, he stopped the boat and brought out his fishing tackłe. He threw it in the river with the aim of catching a fish. Not long he realised that the stick is heavy, he quickly lift it up and to his greatest surprise, he saw two big fishes on the stick.

Noodles With Liver Sauce

Liver sauce is healthy especially when cooked with vegetables. It is delicious when served with white rice or noodles. It can also be served with fried yam. Below is the recipe :
Ingredients :
1/4 kg liver (boiled)
1 medium cup diced onions & bell peppers
1 scotch bonnet & 1 sprig of curry leaves (grated)
1 small cup chopped spinach
1 tbsp curry
1 tsp mixed spices
1 tbsp garlic and ginger paste
1 stock cube
Salt to taste
3 tbsp oil



Children loves pancake especially with cream and fruits. It's an easy snack to prepare for children. And a lunch box idea. Just follow the recipe, your children will love it.

Tips and Tricks on Dried Vegetables

  I love vegetables especially green vegetables. I love the greenish colour in cooked food. I just figured out a way of turning dried spinach and spring onions into fresh vegetables. It's very easy. Just pour some water in a bowl and soak the spinach and spring onions for 10–15 minutes. The result will surprise you. It will be as green as the fresh vegetables. 

NB: You can use spring onions in soups, salad, jollof rice, etc You can also use it for garnishing in food.

Oven Baked Fried Rice


1 1/2 peak milk tins of rice

1/4 kg beef (cut into medium size)

4 pieces of carrots(peeled & diced)

2 handfuls of peas

1 diced green pepper

1 bunch of chopped spring onions

1 large onion (diced)

5 pieces of bell peppers(diced)

1 grated scotch bonnet

1 sprig of grated curry leaves

1 tbsp curry powder

1 tbsp paprika

1 tbsp ground ginger

1 tsp chilli powder

 1 tbsp paprika

1 tsp seasoned salt

1 tbsp ginger and garlic paste

2 stock cubes

Greenish Scrambled Eggs and Shredded Chicken

Greenish Scrambled Eggs and Shredded Chicken is healthy and delicious. Very easy to prepare with few ingredients. Below is the recipe.


4 eggs

Pieces of  cooked shredded chicken (left over)

1/2 bunch of ugu leaves (cut into thin pieces)

1 chopped onion

1 chopped tomato

1 grated bell pepper

1 stock cube

A dash of seasoned salt

1 tsp curry

1/2 tsp chilli powder


Vegetable Sandwich

Sandwich is my favourite snack. I'm not a fan of bread but I love sandwich, especially vegetable or sardine sandwich. It's tasty and healthy. It's best served for breakfast with tea. But it can also be eaten any time of the day.


 1 loaf of sliced of bread 

1 small cabbage (washed & shredded) 

1 small bunch of lettuce (washed in salty water & shredded) 

4 carrots (peeled & grated)

3 plump tomatoes (cut into cubes) 




Egusi Soup

 Egusi Soup is one of my favourite soup. I love preparing it and never get tired of it. I always serve it with pounded yam.


2 peak milk tins of ground egusi

1/4 kg beef

1/4 kg biscuit bones 

1 medium cup blended tomatoes, bell peppers and onions 

1 chopped onion 

1 cup chopped ugu leaves
