Vegetable Jalfrezi

Ingredients:

1/2 diced cauliflower 

5-6 diced carrots

3 diced bell peppers

1 diced onion

3 tomatoes  (puree) 

1 tbsp ketchup 

1 tsp turmeric

1 tsp garam masala

1 tbsp ginger and garlic paste 

1 tsp White pepper 

1 tsp salt

2 stock cubes 

3 tbsp olive oil 

   Method 

Place a pot of water on the fire and bring to the boil. Add salt, turmeric and diced cauliflower. Allow to boil for4-5 minutes. Strain and set aside. 

   Heat the olive oil in a pan, add ginger garlic paste and diced onion. Stir fry for some minutes. Add the bell peppers, puree tomatoes and ketchup. Fry till the water in the tomatoes has absorbed. Add the diced boiled carrots, cauliflowers, seasonings and spices. Stir fry for 5 minutes. If it too sticky, add little water and allow to cook on medium heat. 

   Serve with flavoured rice or flat bread.
