Potato Strudel

Potato Strudel is a delicious snack prepared with flour and potatoes as the major ingredients. 


2 1/2 cups flour 

1/2 tsp baking powder 

1 tbsp sugar 

1/2 tsp salt 

3 tbsp melted margarine 

3 eggs

1/4 cup water 


Seive the flour, salt and baking powder in a medium bowl. Add the sugar, melted margarine and eggs. Stir well with a wooden spoon. Pour the water, knead and mix till you form a soft dough. Cover and allow to rest for at least 30 minutes. 

   Filling :

10 potatoes (boiled and cut into cubes) 

1 tbsp olive oil 

1/2 tsp salt 

1 tbsp thyme 

1 tsp basil 

1 tsp oregano 

1 diced onion 


Put all the ingredients in a medium bowl and toss well to coat. 

  *** Divide the dough into four and roll two of the dough flat with a rolling pin. Cut into square shape. Return the excess dough into the bowl and mould with one of the dough. Put tbsps of the potatoes ingredients on top of the square. Rub some water all round the edges of the square dough. Use a small object and place on top of the other square dough, press and remove. It will you a hole, depending on the object. Do that all round the square dough. Cover with the other square dough and press the edges in order to stick. So that it will not open when baking. Brush the top with egg wash. And bake in preheated oven for 20 minutes or until golden brown.
