Coconut Bread

Coconut Bread is a delicious soft bread prepared with flour, grated coconut, coconut milk, yeast, etc. Best serve for breakfast with hot tea.

  Ingredients:

3 1/2 cups of flour 

1 1/2 tbsp yeast 

3/4 cup of sugar 

1/2 tsp salt 

3/4 cup grated coconut 

1 small cup coconut milk 

1/4 cup melted butter 

  Method 

Soak the yeast, grated coconut and sugar in a mixing bowl with one cup of warm water. Stir and allow to rise for 5- 10 minutes.

Mix the flour with the salt. 

  Add the melted margarine, coconut milk into the bowl of yeast-coconut-sugar. Stir well. Add the flour little at a time knead to form a soft dough. Remove the dough from the bowl and oil the mixing bowl. Return the dough, cover with a kitchen cloth and keep in a warm place to rise for at least an hour. 

  Diced the dough into two. Brush the baking tins with some oil. Fold and put inside the baking tins. Cover and allow to rise for at least 30 minutes. Bake in a moderately  preheated oven for 25-30 minutes.
