Groundnut Soup is a delicious soup prepared with groundnut, beef and vegetables. It's eaten by various tribes in Nigeria. And served with swallow.
1 cup of ground groundnut
1/4 kg beef & biscuit bones
1/2 bunch of chopped ugu
1 cup of blended bell peppers and onions
3 stock cubes
1 cooking spoon palm oil
1 small chopped onion
1 tbsp thyme
A dash of ground nutmeg
Boil the beef and biscuit bones with thyme, nutmeg, salt, stock cubes and chopped onions till the beef is tender. Add the blended vegetables and cook for 10 minutes, add the groundnut, palm oil and stir now and then. Allow to cook for some minutes. Lastly, add the chopped ugu and stir. Cook on medium flame for some minutes.
Serve with any swallow of your choice.
