Yam In Eggs

Yam In Eggs is a lunch box idea. It's always prepared for my nephews and they love it. 


1/2 small yam

5 eggs

Pinch salt

2 stock cubes

1 diced onion

1 diced capsicum pepper

1 tsp curry

1/2 tsp ground ginger


Peel the yam, cut into cubes and boil. Break the eggs in a small bowl, add the diced onions and capsicum pepper, seasonings, spices and whisk. Heat the oil in the pan. When it's very hot, coat the boiled yam in the egg mixture and fry in the hot oil. Serve with hot tea.
