Green Frittata

Green Frittata is a simple egg delicacy, prepared with eggs and vegetables. Best serve for breakfast with hot tea. I'm sure you will enjoy it.


5 eggs

1 medium cup chopped spring onions

1 diced onion

1 diced bell peppers

2 diced tomatoes

1 tsp curry

1 tsp ginger paste

2 stock cubes

2 tsps oil


Break the eggs in a medium bowl. Add the vegetables, seasonings and spices. Whisk well. Heat 1 tbsp of oil in a non stick pan on the fire, add some of the egg mixture,{I used the smallest non stick pan) allow it to set. Then gently flip over and fry the other side. Remove the frittata from the pan and keep in a clean plate. Repeat the process with the remaining egg mixture. Cut the frittata into two. You can drizzle some ketchup on it and serve.
