Scrambled Eggs and Veggies


4 eggs

1 carrot (peeled & diced)

1 boiled potatoes (peeled & diced)

1 onion diced

1 handful of chopped spring onion

1 green pepper (seeded & diced)

1 tomato (deseeded & diced)

1/4 small cup liquid milk

1 bouillon cube

1/2 tsp chat masala

1 tsp mixed spices

Pinch black pepper

Pinch salt

1/2 cooking spoon olive oil


Heat the oil in a pan, add the tomatoes, green pepper, carrot, boiled potato, onion, spring onion and fry for 5 mins.Season with bouillon cube and spices. Whisk the eggs with milk, salt and black pepper. Pour over the veggies and allow to set. Then scrambled the eggs.

Serve with bread and tea.
