She stood by the window sill watching the beautiful scenery outside her room. A river was a bit far from their house. But she can still sight the river. She loves nature; the trees, plants,lush grasses, birds, insects, animals, etc. Birds were flying on the beaitiful blue sky. The water was blue. A fisherman was paddling a canoe. He held a rod in his hand, he threw it inside the river with the intension of catching fish. The riverside was serene only chirping of birds were heard. She was thinking of a way to end their problem. She wanted to help her patents. Her father is a retiree.

Tips and Tricks on Ginger, Garlic and Onion

Food i.e main course taste great when ginger and garlic is used in cooking. How? When blending tomatoes, bell peppers and onions, add fresh ginger and garlic and blend together. It gives a very good taste and the aroma is very nice.It's a very good cooking tip.

 

  Another tip:

When cooking rice or pasta, before the food is completely cooked, grate ginger, garlic and onions and add add in the pot. It gives a very nice aroma and taste great. A very good tip too.

Yam In Eggs

Yam In Eggs is a lunch box idea. It's always prepared for my nephews and they love it. 

Ingredients:

1/2 small yam

5 eggs

Pinch salt

2 stock cubes

1 diced onion

1 diced capsicum pepper

1 tsp curry

1/2 tsp ground ginger

  Method

Peel the yam, cut into cubes and boil. Break the eggs in a small bowl, add the diced onions and capsicum pepper, seasonings, spices and whisk. Heat the oil in the pan. When it's very hot, coat the boiled yam in the egg mixture and fry in the hot oil. Serve with hot tea.

Yam Balls

Yam balls is one of my favourite savoury snack. It's also a small chops. Prepared with yam as the major ingredient and egg,etc. It can be serve with tomato sauce.

  Ingredients:

1/2 small yam

1/4 kg minced beef

1 medium cup blended bell peppers and onions

4 eggs

1 tbsp curry

1 tbsp ginger paste

1 tbsp garlic paste

1 tbsp thyme

3 stock cubes

Salt to taste

Samosa (Kneading Method)

Samosa is an Asian Snack. It is loved and prepared by many people. The major ingredients are flour and minced beef. It can be served a lone or with a tomato soup. I am a fan of Samosa and never get tired of preparing it. 

Ingredients:

2 peak milk tins of flour

1 tsp salt

Filling:

1/4 kg minced beef

4 diced bell peppers

1 diced green pepper

1 diced onion

1 tbsp thyme

1 garlic paste

1 ginger paste

Salt to taste

2 stock cubes

4-5 tbsp oil

Spicy Potato Congee

I called it Spicy Potato Congee because of the spices I used, some arè hot. It is nutritious and best for this weather.It is prepared with potatoes, vegetables and spices. Served as lunch or dinner. I am a fan of potatoes and never get tired of creating and preparing varieties of recipes of it. Hope you will give it a try. I'm sure you will enjoy it.

Ingredients:

1 small bowl of potatoes (peeled & diced)

1/4 small cabbage (shredded)

4 carrots (peeled & diced)

1 small cup of diced bell peppers

2 scotch bonnets(grated)

Homemade Waina With Ugu Soup

  Waina (Rice Cakes) is a Hausa Traditional Food. Prepared by many people from different tribes. It is best served as lunch. If to be well enjoyed, served with any of the local drinks like zobo drink, kunun zaki, etc. It prepared with rice or maize, yeast, oil, etc. For the soup, ugu leaves, blended vegetables, beef, biscuit bones, etc. Below is the recipe.  3 measures of local rice

 3 tbsp yeast

 1 bottle of oil for shallow frying

Offal Pepper Soup

Offal Pepper Soup is an easy and delicious appertizer prepared with few ingredients.

 Ingredients:

1/2 kg offal

1 medium cup blended bell peppers and onions

1 diced onion

1 tbsp ginger paste

1 tbsp garlic paste

1 tsp ground black pepper

A da ground nutmeg

Few pieces cloves

A dash of ground cinnamon

Salt to taste

4 stock cubes

Kpomo Pepper Soup

Kpomo is originally Yoruba food. Yoruba is one of Nigeria's 3 major languages. Kpomo Pepper Soup is an appertizer. It contains fiber. It can be serve as lunch with with main course. 

Ingredients:

1 small bowl kpomo

1 large diced onion

 3 diced bell peppers

1 tbsp ginger and garlic paste

1 tsp  ground black pepper

3 stock cubes

salt to taste

A dash of ground nutmeg

Veggies Soup is a light appertizer. Prepared with vegetables: potatoes, carrots, bell peppers, onions and cryfish.

  Ingredients:

1 small bowl potatoes(peeled, diced & washed)

1 handful of crayfish

1 small cup diced bell peppers & onions

2 carrots (peeled & diced)

1 handful of sliced pumpkin leaves

1 tsp salt

1-2 stock cubes

1 tsp mixed spices

1 tsp ginger

2 tbsp oil
