Egg Biryani

Egg Biryani is an Indian and Pakistan Cuisine. Prepared with rice, eggs and vegetables as the major ingredients. Known to many Nigerians and prepared by many. I love all the biryani and never get tired of preparing it. This biryani is delicious and can be served as lunch or dinner. Check the recipe below. Ingredients:

2 peak milk tin of rice (preferably basmati rice)

2 raw eggs

2 boiled eggs

2 fried brown onions

2 medium sized onions

3 tbsp yogurt

Egusi Soup (Caking Method)

Egusi Soup is one of Nigeria's popular soup. Prepared by various tribes. It's major ingredients are egusi, beef, offal, fish, green vegetables,etc. It's a delicious soup and it's irresistible. Serve with swallow of your choice. But best served with pounded yam. It's one of my favorite soup. Check out the recipe below. 

  Ingredients:

2 peak milk tin of ground egusi 

Beef (cut into medium size)

Pieces of stock fish

1 small cup ground crayfish 

1 cup chopped ugu leaves

1 tbsp ground pepper 

1 1/2 stock cubes

Salt to taste 

Beef Biryani

 Beef Biryani is a delicious Indian and Pakistan Cuisine. Now known by Nigerians and prepared by many. Major ingredients are beef, rice and veggies. It's one of my favorite Indian /Pakistan Cuisines, I never get tired of preparing it. Below is the recipe.

 Ingredients:

1 1/2 small cups of rice (preferably basmati rice) 

4 peeled & diced potatoes 

2 boiled eggs 

1 tbsp garam masala (cloves, black pepper, cinnamon stick, bay leaf, black and green cardamom) 

4 tbsp oil

4 tbsp butter 

Salt 

A dash of basil 

Egg Drop Soup

  Egg Drop Soup is a quick appetizer prepared with egg, vegetables,etc. 

Ingredients:

3 large eggs 

1 medium cup stock

1 tbsp cornstarch

1 diced green chili 

1 tbsp crushed garlic 

1 tbsp crushed ginger 

1 tbsp chopped curry leaves 

1 tsp coriander mix 

1 tbsp white pepper 

1 tsp ground cinnamon 

2 chopped green leaves (any green leaves of your choice) 

  Method 

Noodles and Avocado Stir Fry

Noodles and Avocado Stir Fry is a quick fix prepared within a short time with noodles and vegetables

I love noodles and stir fry dishes. I never get tired of preparing it. 

  Ingredients:

1 pack noodles 

1 avocado (peeled & cubed) 

2 leaves of cabbage (shredded)

1 carrot (scraped & diced) 

1 scotch bonnet (diced) 

1 tsp coriander mix

1 tsp white pepper 

Noodles seasonings

3 tbsp oil

   Method 

Parboil the noodles, wash and strain. Set aside.

Sauteed Green Rice with Shallots & Salad

Sauteed Green Rice with Shallots & Avocado Salad is a tasty rice delicacy with natural colour without the use of food colour. Just blend green vegetables to get the green colour.

  Ingredients:

2 small cups of rice (parboiled) 

1 medium cup blended morninga leaves 

1 small cup shallots 

1 tbsp ginger paste 

1 tbsp garlic paste 

1 tbsp coriander mix 

1 tbsp chopped curry leaves 

1 tbsp chopped mint leaves 

1 tsp secret of cooking 

1 tsp basil 

2 stock cubes

Salt to taste 

 Method 

Chocolate Pancakes Wraps

Chocolate Pancakes Wraps 

  Ingredients:

2 peak milk tin of flour 

1/4 cup cocoa powder 

1 tbsp baking powder 

2 tbsp sugar

1 egg

Oil for shallow frying 

  Method

Seive the flour in a medium bowl. Add the cocoa powder, baking powder, sugar, egg and mix. Add some water and whisk till fluffy.

Fish Pepper Soup

 Fish Pepper Soup is an appetizer prepared with fish as the major ingredients, onions, bell peppers, spices, seasonings. It's prepared within a short time.

  Ingredients:

 1/2 kg fresh mackerel 

 5 diced bell peppers 

2 scotch bonnet 

2 tbsp garlic paste 

2 tbsp ginger paste 

2 tbsp chopped mint leaves 

2 tbsp chopped curry leaves 

1 tbsp mixed spices 

1 tbsp ground pepper 

1 tbsp secret of cooking spice 

Salt to taste 

3 stock cubes 

  Method 

Coconut Rice

Coconut Rice is a tasty food to prepare. Ingredients such as rice, coconut milk, vegetables, crayfish, are used to used to prepare the food. 

   Ingredients:

2 peak milk tin of rice

2 cups coconut milk

Pieces of boiled meat

1 small cup stock

1 small cup ground crayfish

1 small cup chopped bell peppers & onions 

1 small cup of chopped carrots, green beans 

1 diced onion 

1 tsp coriander mixed spice 

1 tbsp curry

1 tbsp ground pepper 

1 tsp secret of cooking spice

Homemade Burger

 Burger is a tasty snack prepared with flour, margarine, egg, minced meat, lettuce, tomatoes, etc. Can be serve as brunch. This is my first attempt of preparing the burger and I really enjoyed it. It can be served with French fries.

    Ingredients:

3 1/2 peak milk tin of flour

1 1/2 tbsp yeast 

1/4 peak milk tin of melted margarine 

1 egg

1 tsp salt 

1 tsp sugar

   Filling:

1/2 kg minced meat

1 bunch of lettuce 

4 plump tomatoes

1 sliced onion 

Salt to taste 

1 tbsp thyme
