Banana Bread

Banana Bread is a tasty bread. Prepared with flour, banana, sugar, eggs, baking soda, etc. Best for breakfast.

 Ingredients:

2 1/2 cups of flour 

3 banana 

1 tbsp baking soda

1 tsp salt  

3/4 cup of sugar 

3 eggs

3/4 cup of oil 

1/4 cup of water 

  Method 

Seive the flour in a mixing bowl. Add salt and baking soda. 

 In a medium bowl, add the banana and mash with a fork. Add the eggs, sugar, oil and stir well. Pour in the bowl of dry ingredients and stir well.

Mango Salsa

Mango Salsa is a simple yet delicious salad. Prepared within a short period of time with few ingredients. Best serve with fried rice, jollof rice, spaghetti, cous cous, etc

  Ingredients:

1 large mango (peeled and cut into cubes) 

1 onion (cut into small cubes) 

3 tomatoes (Cut into cubes) 

1 large green pepper (cut into small cubes) 

1 tbsp lemon juice

Pinch salt

  Method

Mix the fruit and vegetables in a medium bowl, add the lemon juice and salt. Toss well. Serve in a salad bowl or plate. Enjoy!

Coconut Bread

Coconut Bread is a delicious soft bread prepared with flour, grated coconut, coconut milk, yeast, etc. Best serve for breakfast with hot tea.

  Ingredients:

3 1/2 cups of flour 

1 1/2 tbsp yeast 

3/4 cup of sugar 

1/2 tsp salt 

3/4 cup grated coconut 

1 small cup coconut milk 

1/4 cup melted butter 

  Method 

Soak the yeast, grated coconut and sugar in a mixing bowl with one cup of warm water. Stir and allow to rise for 5- 10 minutes.

Mix the flour with the salt.

Potato Strudel

Potato Strudel is a delicious snack prepared with flour and potatoes as the major ingredients. 

  Ingredients:

2 1/2 cups flour 

1/2 tsp baking powder 

1 tbsp sugar 

1/2 tsp salt 

3 tbsp melted margarine 

3 eggs

1/4 cup water 

  Method 

Seive the flour, salt and baking powder in a medium bowl. Add the sugar, melted margarine and eggs. Stir well with a wooden spoon. Pour the water, knead and mix till you form a soft dough. Cover and allow to rest for at least 30 minutes.

Ingredients :

6 sliced bread 

1 large plump sliced tomatoes 

1 diced onion 

1/2 thinly sliced cucumber 

Butter for spreading 

Pinch salt 

1/2 tsp sugar 

1 tbsp olive oil 

  Method 

Heat the olive oil in a pan. Add the diced onion, season with salt. Add the sugar and stir fry till golden brown. But not burnt. Remove from the fire and set aside. 

Peanut Butter Sandwich Roll Up

Peanut Butter Sandwich Roll Up is a simple, delicious and quick snack. Prepared with just two ingredients: sliced bread and peanut butter. Can be used as childrens' lunch box ideas. They will surely love it. Just give it a try.

  Ingredients:

5 sliced bread

Peanut Butter

  Method

Cut the edges of the sliced bread. Roll flat with a rolling pin. Spread 1 tbsp each of the peanut butter on top of the sliced bread. Roll gently like a mat. It will stick because of the peanut butter.

Avocado and Vegetables Salad

Avocado and vegetables Salad is a delicious and simple appetizer. Prepared within few minutes and with just few ingredients. I love salad and never get tired of preparing it. Can be served with fried rice, jollof rice, spaghetti, etc

  Ingredients:

2 avocados

5 plump tomatoes 

1 medium onion

Pinch salt 

1 tsp lime 

1 tbsp olive oil 

1 tbsp chopped spring onion for garnishing 

   Method 

Wash the vegetables. Dice the tomatoes and avocados. Slice the onion thinly.

Scone is a delicious snack and easy to prepare. It is of different varieties i.e strawberry scones, apple scones, plain scone, etc. 

Ingredients:

3 small cup of flour 

4-5 tbsp margarine 

1 tbsp baking powder 

3 tbsp sugar 

1 tsp salt 

1 egg

1 egg for glazing 

 Method 

Seive the flour, salt and baking powder in a medium bowl. Add sugar and mix. Add the margarine and mix until it resembles breadcrumbs. Break the egg and add on the flour mixture. Mix well. Lastly, add liquid milk and mix. Knead to form a soft dough.
