Secret of Cooking & Turmeric Fried Rice

 Fried rice is one of the common Nigerian food. Prepared by people from different parts of the country. I named it Secret of cooking spice and turmeric fried rice because of the colour. The colour came out well and taste great. Fried rice happened to be one of my favourite food and I never get tired of preparing it. It can be served with Cole slaw or vegetable salad. Below are the ingredients and recipe. 

Ingredients:

2 small cups rice (parboiled) 

6  diced carrots

Pieces of diced  green beans 

1 large diced onion 

6 diced bell peppers 

Pancake Tower

I named it Pancake Tower  because of the height of the pancake. It is a delicious and simple recipe. I love pancakes and never get tired of preparing it. With a few ingredients, you will get a good pancake. It can be served as breakfast or brunch. It can be savoury or sweet. Depending on how you want it. 

Ingredients:

3 small cups flour 

1 tbsp baking powder 

1/2 tsp salt

2 tbsp sugar

1 small cup liquid milk

1 egg

Pineapple Fried Rice

Pineapple Fried Rice is a unique dish prepared with pineapple and serve in pineapple husk. It is also prepared with varieties of tests i.e carrots, green beans, spring onions, onions, bell peppers, etc. Best serve as lunch with a cool drink. 

Ingredients:

1 small cup rice (parboiled) 

1 small pineapple 

3-4 diced carrots 

1/2 small cup diced green beans 

1 large diced onion 

5-6 diced bell peppers 

2 handfuls of diced spring onions 

1 tbsp curry 

1 tbsp ground ginger 

1 tsp chopped garlic 

Eggs and Tofu Cups

I was inspired by a video I watched on YouTube. But the original recipe was fried but I baked mine and added some more ingredients i.e carrots, onions, etc. Eggs and Tofu Cups are easy to prepare within few minutes. The major ingredients are eggs and tofu.

 Ingredients:

4 eggs

Chopped spring onions

1  diced onion

1 diced carrots

1 tsp ground pepper

1 tsp White pepper

Salt to taste

 

1 - 2 stock cubes

Oil for greasing

Steamed Rice (Dambun Shinkafa)

 Steamed Rice known as Dambu in Hausa Language. Is a native food of the Hausas. Eaten mostly in the Northern part of the Nigeria. Prepared with rice or coarse maize and vegetables. The recipe goes like this :

Ingredients:

2 medium cups rice (coarsely ground, washed & strained)

1 medium cup blended bell peppers & onions 

1 medium cup chopped spinach (washed & strained)

1 large onion diced  

1 small cup crushed groundnuts 

Salt to taste 

2 tbsp ground ginger 

2 tbsp crushed garlic 

3 stock cubes 

Garden Egg Stew

Garden Egg is one of my favourite vegetables. I never get tired of eating it. At first, I wanted to create a recipe with it: Garden Egg Rice but changed my mind. I tried making garden Egg Stew and it was very delicious. Below is the recipe. 

 Ingredients:

3 large garden eggs (washed, boiled, peeled & mashed) 

1 cooking spoon ground crayfish 

1 medium cup blended tomatoes, bell peppers, scotch bonnets, spring onions  & onions)

1 small cup chopped moringa 

1 handful chopped spring onions 

1 cooking spoon palm oil 

Cauliflower Curry

Cauliflower Curry it's a simple and delicious soup. Prepared with vegetables, seasonings and spices. The colour of the soup made me named it. I used curry masala, secret of cooking and turmeric. It really gave me a nice colour and flavour. It can be served with rice or pasta. Best for lunch. 

  Ingredients:

1 medium cauliflower (cut into medium pieces) 

3  diced tomatoes 

2 bell peppers 

2 onions

2 handfuls of chopped onions 

1 tbsp  mashed garlic 

1 tbsp ground ginger

1 tbsp White pepper 

1 tbsp ground cinnamon 

Jollof Rice With Cole Slaw

Jollof Rice with Cole Slaw

Ingredients: 

1 small cup rice (washed & strained) 

1/2 small cup beans (optional) (boiled) 

1 small cup blended tomatoes, bell peppers & onions 

Pieces of beef (cubed) 

1/2 small cup ground  crayfish 

1 large onion diced 

Asmie's Kitchen spices :

1 tbsp mixed spices 

1 tbsp ground ginger 

1 tbsp ground pepper 

1 tsp garlic

Salt to taste 

2-3 stock cubes

1 cooking spoon palm oil  

  Method 

Omurice (Japanese rice dish)

 Ingredients: 

1 small cup rice 

Chicken breast (but I used can flake tuna fish) 

4 tbsp ketchup 

3 eggs

5 diced carrots 

2 onions 

Salt to taste 

1 tbsp garlic paste

1 tbsp ground pepper (1/2 tsp for the rice & rice 1/2 for eggs) 

2 tbsp olive oil 

 Method 

Boil the rice till almost cooked. Wash and strain. 

  Whisk the eggs with some salt and pepper. Set aside.
