Egusi Soup

Ingredients:

1 medium cup ground Egusi 

Pieces of kpomo (scraped & washed)

1 small cup blended tomatoes, bell peppers and onions 

1 handful chopped spring onions 

1 small cup chopped moringa leaves 

1 cooking spoon ground crayfish

1 cup stock 

1 tbsp chopped garlic 

1 tbsp mixed spices 

Salt to taste 

2-3 stock cubes

1 cooking spoon palm oil 

  Method 

Cook the kpomo till almost tender. Strain and set aside. 

Caramelized Carrots And Onions

Ingredients: 

10 carrots (peeled and diced,) 

2 diced onions

1 tbsp butter 

1 tsp olive oil 

1 tbsp white pepper 

1 stock cube 

Pinch salt

1 tbsp sugar

1 tsp basil 

1 tbsp soon chopped curry leaves 

1 tbsp chopped mint leaves 

1 handful of chopped parsley or coriander leaves 

1 tbsp chopped garlic 

Method

Boil the carrots with some water and salt. Strain and set aside.

Sketchy Basket Weave Birthday Cake With Royal Icing

Ingredients of Birthday Cake:

3 peak milk tins of flour

15 eggs

1 bag margarine 

1 tbsp baking powder 

1 peak milk tin of sugar 

1 lime

 Method

Cream the sugar and margarine till pale. Add the eggs and squeezed lemon. Stir well. Add the baking powder and flour little at a time, stirring till fluffy. Grease the baking pan and pour the batter. Bake in preheated oven for 30-35 minutes or till golden brown. Remove from the oven,place on the cake board and allow to cool. 

   Royal Icing Ingredients:

1 1/4 pack icing sugar

Vegetable Jalfrezi

Ingredients:

1/2 diced cauliflower 

5-6 diced carrots

3 diced bell peppers

1 diced onion

3 tomatoes  (puree) 

1 tbsp ketchup 

1 tsp turmeric

1 tsp garam masala

1 tbsp ginger and garlic paste 

1 tsp White pepper 

1 tsp salt

2 stock cubes 

3 tbsp olive oil 

   Method 

Place a pot of water on the fire and bring to the boil. Add salt, turmeric and diced cauliflower. Allow to boil for4-5 minutes. Strain and set aside. 

Garlic Knots

Ingredients:

1 1/2 small cups flour 

2 tsp yeast

1 tsp salt 

1 tsp sugar

1/4 small cup warm water

3 garlic cloves (peeled and chopped)

Some salt 

1/2 small cup chopped parsley 

2-3 tbsp butter 

Method 

Soak the yeast in warm water and allow to dissolve for 5 minutes.

Mini Veggies Stromboli

Ingredients:

2 1/2 small cups flour 

1 tsp baking powder 

Salt

Filling:

1/4 chopped cabbage 

5 chopped carrots 

Chopped green beans 

3 chopped bell peppers 

1 chopped green pepper 

1 large chopped onion 

1 tbsp ginger and garlic paste 

1/2 tsp White pepper 

1/2 tsp basil powder

1 tsp curry  

Salt to taste 

3 tbsp oil

Vegetable Manchurian (Indo Chinese Cuisine)

Ingredients:

1/4 (chopped) cabbage 

5 grated carrots 

1 diced onion

5-6 diced bell peppers 

1 diced green pepper 

1/4 small cup flour 

1 tbsp corn flour 

Salt

1 tbsp soy sauce

Pinch dried basil leaves 

1 tsp garam masala 

1 tbsp ginger and garlic paste 

1 tsp Asmie's kitchen secret of cooking spice

1 bottle oil

Egg Muffins

Ingredients:

5 large eggs 

2 diced carrots 

Pieces of diced green beans

1 diced large onion 

1diced plump tomatoes 

1 diced bell pepper 

1/2 tsp garam masala

1/2 tsp White pepper 

1 stock cube

1/2 tsp salt 

3 tbsp oil

 

Method

Whisk the eggs in a medium bowl. Add the diced vegetables with seasonings and spices. Whisk again. 

  Greese the muffin tray holes with the oil. Pour the egg mixture in all the holes. Bake in moderately hot oven for 12 minutes. 

   Serve and enjoy!
